All you need is :
- 500 diced eggplant
- 400 g diced potato
Cooking Instructions:
- Mix the Eggplant and Potato curry into 500 ml of water, to make a paste
- Add 3 – 4 tbls of oil in a pot and cook the paste for a few minutes
- Add the diced eggplant and potatoes and cook until tender
Hints: Garnish with freshly chopped coriander leaves.
