Ingredients:  Garlic, Tomato, Coriander, Cumin, Cinnamon, Salt, Chilli, Onion, Cardamon, Turmeric, Paprika and Chat Masala

All you need is :

• 500 diced eggplant
• 400 g diced potato

Cooking Instructions:

1. Mix the Eggplant and Potato curry into 500 ml of water, to make a paste
2. Add 3 – 4 tbls of oil in a pot and cook the paste for a few minutes
3. Add the diced eggplant and potatoes and cook until tender

Hints: Garnish with freshly chopped coriander leaves.
