Ingredients:  Dried Red Chillies, Garlic, Shallot, Salt, Lemongrass, Sugar, Kaffir Lime, Galangal, Spices (Coriander Seeds, Cumin, Cardamom).

Directions:  

1. Stir fry one can of Red Curry Paste and 400ml of coconut milk, and cook until it boils. 
2. Add 600 g of  chicken, then add 400 ml of  coconut milk, and stir until chicken is cooked.
3. Add 200g of  eggplants and keep stirring until cooked.
4. Sprinkle with fresh Thai basil leave, and fresh Thai chillies.
5. Serves 5-7. Serve with jasmine rice.
