Fish Curry with Tomatoes and Fresh Herbs
Serves 4

Ingredients Required
- 750g boneless fish fillets
- 3 medium ripe tomatoes
- 2 onions
- 2 tbsp peanut oil
- 2 tsp grated fresh ginger
- 2 tsp Ayam Curry Powder
- 2 cups fish sauce
- 2 tbsp Ayam Chilli Garlic Sauce
- 2 tbsp shredded coriander
- 2 tbsp shredded mint
Cooking Instructions:
- Cut fish into 3cm cubes, quarter tomatoes, remove and discard seeds and chop throughly, cut onions into eights
- Heat oil in a wok or medium saucepan
- Add onion, stir over medium heat for 1 minute
- Add ginger and curry powder and stir over heat for a few seconds.
- Add tomatoes, fish sauce and chilli garlic sauce. Bring to the boil, cover and cook over low heat for 5 minutes or until tomatoe has softened.
- Add fish, coriander and mint, cook uncovered for 2 minutes or until fish is just cooked through
Hint: Use 1 kg uncooked king prawns instead of fish. Simply peel and devine prawns. Add with coriander and mint.
