Cassia sticks, thicker than cinnamon sticks, are obtained from the inner bark of the tropical evergreen tree, which is closely related to cinnamon. The sticks have a reddish brown colour and a warm, mild and sweet flavour but stronger than cinnamon. It is widely used in desserts and also in savoury dishes.
